I'm trying that beef/onion sauce today. But I'm taking some liberties. I'm smoking a chuck roast to medium rare or medium. Then I'm going to cube it up and throw it in the Instant Pot with the onions and do high pressure for 2 hours and see how it looks. And then I'll do high pressure cooks in 1 - 2 hour intervals until it looks like his finished product. I'm hoping it cooks in about 4 - 6 hours. I forgot to start it this morning when I woke up. oops.
